Sweet potato boats

Simple but oh so tasty stuffed sweet potato boats are a real dinner winner.

Ingredients:

2-3 sweet potatoes, scrubbed and semi-halved lengthways
1 can of black beans
1 can of chopped tomatoes
1 brown onion, diced
1/2 red capsicum, diced
2-3 cloves of garlic, crushed or chopped
1 tsp harissa spice blend, or 1/2 tsp each of cumin powder, chilli flakes & paprika
olive oil for frying
grated cheese and/or Greek yoghurt for serving
1 avocado, diced
1 cup of chopped coriander

Method:

Drizzle sweet potatoes with olive oil, season with salt and pepper and bake in a 180 degree oven for approx. 45 minutes or until tender.

While the sweet potatoes are cooking gently fry onion, capsicum, garlic and spices in a saucepan for a few minutes then add beans and tomatoes. Simmer for approx. 20 minutes until liquid has reduced. Serve baked sweet potatoes with a generous filling of the bean mixture, top with grated cheese and/or a dollop of Greek yoghurt, diced avocado and chopped coriander.
