Soothing start

Flaxseeds are rich in omega 3 fatty acids and lignans – phytonutrients that have both soluble and insoluble fibre and antioxidant properties. They also have a soothing demulcent quality that makes them perfect for an anti-inflammatory, healing breakfast that also keeps you regular. The nutrients in this easy dish also contribute to hair, skin and heart health – even more reason to start your day with this plant based protein-packed nutrient dense meal.

Serves 2

Ingredients

200g flaxseeds

200g water

1 tbl spn lemon juice

400ml almond or coconut milk

1 vanilla bean pod – seeds scraped

¼ tspn ground cinnamon

Pinch sea salt

Optional to serve maple syrup, honey, yoghurt or Danielle’s Licorice Root Apple Butter

Method

Soak the flaxseeds overnight in the water and lemon juice. In the morning add the soaked flaxseeds, almond milk, vanilla seeds and cinnamon to a heavy-based saucepan and stir well to combine.

Bring to a simmer over medium heat, stirring to prevent sticking to the bottom of the pan. Cook for 3-5 minutes until porridge is light and fluffy.

Spoon into bowls and serve with extra almond or coconut milk, yoghurt and Danielle’s Licorice Root Apple Butter, honey or maple syrup.
