Recipe: SPROUTED LENTIL PATTIES – By Danielle O’Donoghue

Ingredients Serves:
  • 3 cupsgreen or brown sprouted lentils
  • 2medium red onions, finely diced
  • 2 tblspghee (to fry onions)
  • one lemon's worth ofgrated rind
  • 1egg, lightly beaten
  • 2cloves garlic, peeled and crushed
  • handful offinely chopped mint leaves
  • handful offinely chopped coriander leaves
  • handful offinely chopped parsley leaves
  • 1 cupwalnuts oven roasted then ground
  • 2 tspBaharat spice mix (see below)
  • 1 tspsea salt
  • 1/3 cupghee, olive oil or duck fat to fry in

Baharat spice mix*
1 tsp black peppercorns
1 tsp coriander seed
1 small cinnamon stick, coarsely chopped
½ tsp whole cloves
½ tsp ground allspice
2 tsp cumin seed
1 tsp cardamom pods
½ whole nutmeg, grated

Grind all ingredients to a powder in a spice mill or mortar and pestle.

*Baharat is a Middle Eastern spice blend used for flavouring meat, fish, stews, and various bean and grain dishes.

Method

These tasty little patties utilize sprouted lentils, made by soaking lentils at least 12 hours, draining and rinsing well, then setting in a dark warm place, rinsing twice a day, to sprout. Once the little sprouting tails have grown to about 5 mm (3–5 days), the composition of the lentil will have changed in many positive ways, increasing the bioavailability of the nutrients and neutralizing or inactivating toxins and anti-nutrients, and there you have a lentil sprout!

Place sprouted lentils in a food processor or blender and process to a paste.
Sauté onions in the 2 tblsp ghee till translucent and sweet.
Combine the lentil paste, onions, and all the other ingredients, except frying oil.

Roll into balls the size of a walnut in its shell and flatten each into a thin patty.

Fry patties till golden brown in ghee, olive oil or duck fat.

Serve with tahini yoghurt sauce.
