MISO CARAMEL POPCORN

Recipe: MISO CARAMEL POPCORN

Ingredients Serves:
  • 4 cupsfreshly popped popcorn*
  • 2 tblspmiso paste**
  • 1/2 cuptoasted sesame seeds
  • 1/2 cuptoasted almonds
  • 1/2 cupcoconut sugar
  • 1/4 cupmaple syrup
  • 1/4 tspbicarb soda

* Around 1/4 cup unpopped popcorn kernels will make 4 cups of popped popcorn.

** For gluten free version make sure you use gluten free miso paste – such as buckwheat or rice miso

Method

Place the freshly popped popcorn, seeds and nuts in a large bowl.

Place maple syrup, coconut sugar and miso in a small saucepan over low heat and cook, stirring till sugar dissolves.

Increase heat to high and cook while stirring for 3–4 minutes or until thickened.

Remove from heat, add the bicarb and stir to combine.

Work quickly to pour the mixture over the popcorn and stir to coat everything.

Spread onto a tray to set. You can also pop the tray into a 180°C oven for 3–5 minutes to toast it a little more and make the popcorn even lighter. Store in airtight containers.
