Recipe: LICORICE ROOT APPLE BUTTER by Danielle O’Donoghue

Ingredients Serves: 2

2 Granny Smith apples

1 cinnamon stick

1 vanilla bean pod

½ tspn licorice root powder

Method

Peel and core the apples – keeping the skin aside. Chop the apple into 2cm pieces. Place the apple, reserved peel, licorice root powder, cinnamon stick and vanilla bean pod into a saucepan. Add 100ml of filtered water, cover and bring to a simmer. Cook on low until the apple softens and disintegrates. Remove vanilla bean pod and cinnamon stick and blend or mash into a paste or butter.

Serve with porridge or pancakes.
