Recipe: SUMMER BLACK BEAN SALAD by Danielle O’Donoghue

Ingredients Serves:
  • 1Lebanese cucumber, diced
  • 400gcooked black beans, or 1 can rinsed
  • 1 1/4 cupscorn kernels
  • 1/2red onion, finely diced
  • 1red pepper, diced
  • 1 cupcherry tomatoes
  • 1/2 cup packedfresh coriander, chopped
  • 1avocado, diced
  • 1mango, diced
  • Juice from 1lime
  • 2tblspextra virgin olive oil
  • a littlesalt and pepper to taste

Method

Combine ingredients in a salad bowl and stir gently to distribute dressing evenly.
