Chia puddings are easy to make, nutritious and yummy.

Ingredients

Serves 1

2 tbs chia seeds
1 cup non-dairy milk eg: almond or coconut
1 tbs maple syrup or preferred sweetener (optional)
smattering fresh seasonal fruit or nuts to make it look pretty
Also, add a pinch of nutmeg, cinnamon,vanilla bean powder, orange or lime rind for variations. Mix & match as you desire

Method

Whisk chia seeds, milk, sweetener & spices together pour into bowl or jar top with fresh fruit or nuts & allow to chill in fridge at least 8hrs or best results overnight.

Keeps for up to 3 days so why not make a few puddings so you can get back to that book you’re reading or run around with your children & look up at the clouds!
