Recipe: BRAISED RED CABBAGE by Danielle O’Donoghue

Ingredients Serves: 6-8 as a side dish
  • 1 tblspolive oil, butter of ghee
  • 2medium to large onions, finely sliced
  • 1garlic clove, crushed
  • 1red apple, finely sliced
  • 1red cabbage, shredded
  • 1 tblspcoconut sugar
  • 2-3 tblspbalsamic vinegar
  • a littlesalt and pepper, to taste

Method

Heat olive oil (butter or ghee) in a large heavy based pan with a lid. Fry onion until soft, sweet and slightly golden. Add garlic and sauté one minute more.

Stir in the cabbage and season with salt and pepper to taste. Cover and cook for 20 minutes.

Add vinegar and sugar and cook for a futher 45 minutes until soft, sweet and sticky.
